Andrea’s La Bella In Ghent Wine Dinner Menu
Rice water and sea salt poached shrimp and artichoke salad with a beet and balsamic glaze – Paired with a 2012 Gadino Pinot Grigio
Braised fennel and local oyster mushroom ragout. Open face raviolo with a tomato concentrate and marscarpone crema – Paired with a 2014 Brooklyn Genealogy Chardonnay
The 3rd course can be replaced for a non meat option for any pescatarians or vegetarians.
Sicilian style beef braciole stuffed with auricchio cheese, fennel sausage, pine nuts and raisins and a soft boiled egg served in a dark roasted tomato sauce over a potato gatue – Paired with a 2014 Barboursville San giovese.
Crooked cassata – My own rendition of a Sicilian Cassata – Cannoli filling, marzipan, rum sponge cake.
